Japanese breakfast for a good start of the day!!

During Japan Expo, Justine Petit gave you the recipe to start your days the Japanese way. Here is how to prepare your Japanese breakfast! Rice, Miso soup, and grilled fish: not much to do with your bowl of cereals!!

The daily breakfast is made of rice, Miso soup, a main dish, and 2 or 3 side dishes. This works for breakfast and also for the other meals of the day for balanced and nutritious.

Ingrédients

Sticky rice
2 glasses of pudding rice
2 ½ glasses of water

Miso soup
650ml water
5g powder Dashi
1 or 2 tablespoons of white Miso
1 or 2 green onions
½ Tofu bloc

Grilled fish
1 fish fillet per person
Salt

 

What to do now?

To prepare the rice

  • Put the rice in a big bowl and add water. Stir and quickly empty the water which has become white.
  • Add new water to the bowl and wash the rice.
  • Repeat 3/4 times until the water is clear.
  • Put the water you measured and the rice in a thick saucepan and let it rest for 30 minutes.
  • Put a lid and boil the water and rice at strong temperature, then reduce to medium temperature. Leave for 7/8 minutes and then reduce to minimum temperature to let it simmer for 15 minutes.
  • Switch the fire off and let it rest with the lid on for 10/15 minutes.
    Never remove the lid while the rice is cooking.
  • Remove the lid and stir the rice, then serve.

To prepare the grilled fish

  • Salt the fish on each face, cover it, and let it rest for 15 minutes.
  • Heat a pan with some oil and put the fish on the skin side.
  • When the skin is grilled, turn the fish over, and leave it for 3/4 more minutes.
  • Serve.

To prepare the Miso soup

  • Add the Dashi to the water and boil it.
  • While it boils, cut the Tofu in 1cm cubes and slice the green onions thinly.
  • Reduce to minimum temperature and add 1 tablespoon of Miso. Taste it and add a second one if necessary.
  • Add the Tofu and onion.
    Never boil the soup when the Miso has been added: Miso turns bitter when boiled.
  • Serve.
